Start by browning a pound of ground beef. Pour off the drippings and set the beef aside to cool. Next, in the same pan you used to cook the beef, stir together chopped onions, garlic, soy sauce, hoisin sauce and red-wine vinegar. After those ingredients have cooked together, add green onions, sesame oil and the cooked beef. Remove the pan from the heat and stir in chopped cucumber, shredded carrots and torn mint. To serve, wrap the beef filling in your choice of Boston, iceberg or Romaine lettuce leaves.
