In the Kitchen with Brian and Lisa: Fresh Apple Muffins
WRAL reporter Brian Shrader and our own Lisa Prince feature seasonal recipes in their Got to Be Good Cookin’ segment using ingredients grown and available right here in North Carolina.
Lisa and Brian have a Fresh Apple Muffin recipe just in time for fall. Even if your muffins usually come from a box, you’ll love this recipe because it’s simple to make and delicious to taste.
To make, start by sifting together all-purpose flour, whole wheat flour, baking powder, salt and cinnamon. Next, mix in butter, sugar, milk, an egg and a cup of shredded, unpeeled apples. For this recipe, Lisa uses Braeburn, but you can try other varieties. Stir the ingredients until the batter looks lumpy. Pour the batter into greased muffin tins, filling about 2/3 full. Bake at 350 degrees for 30 minutes or until done.

You can find apples for this recipe and others at farmers markets, roadside stands and pick-your-own farms across the state. To find a location nearest you, go to www.ncfarmfresh.com.
